Quinoa, Spam & Joe


We try to eat well and be mindful of putting good things into our bodies so we can promote good health. Occasionally there are exceptions. Spam is one of those exceptions. Joe loves Spam.

Joe's grandparents, Joseph & Emily Todd, often received gift packages of Hormel products, including Spam, from their son, Bill Todd who was general manager of the Hormel plant in Austin, Minnesota. Joe stayed with his grandparents quite a bit and remembers eating Spam for the first time,  perhaps in third grade. When Joe was essentially on his own in high school in Fort Wayne, he bought Spam. Then he had Spam when he was in the Navy. Throughout adulthood, he has continued his Spam consumption. 

Love of Spam (and love of Freddy Fender music, but that's another story) were two surprising discoveries I made about Joe. 

Spam became part of our food storage. Every once in a while we have to break open a can from storage, just to make sure it's still "fresh." Is "fresh Spam" an oxymoron?  

This time I fixed Spam with quinoaedamame, and corn. Do those healthy ingredients balance out the unhealthy part of Spam? Whatever you say about Spam's nutritional value, the combination was pretty tasty.
